Our Ethiopia 16oC comes from Sidamo, a region in Ethiopia where it is highly likely that coffee had its origins. Ethiopia 16oC is of Arabica varietal, and is grown at an altitude of at least 1,550metres. It is due to this high altitude which results in the high acidity of the coffee.
A good Sidamo coffee is well-balanced, showing characteristics of complex acidity with cupping notes of citrus and berries.
This signature Ethiopia 16oC has a bright acidity, with a long, winey after taste.

Delivered fresh from the roaster, this made excellent cold brew coffee! My receipt is simple too, I’m using a Hario 650ml filter-in Coffee bottle (model FIC-70), I then add 68 grams of freshly ground coffee (coarse, like kosher salt) in the filter, and then fill the bottle with cold, filtered water to the top square mark. After 12 hours in the fridge, I remove the filter. Store in the fridge and consume within three days. Best when poured over some ice!
